En el presente trabajo de investigación, se pudo determinar los gustos y preferencias de los ciudadanos de Santa Rosa, pertenecientes a la provincia de El Oro, Ecuador, identificando la problemática de este sector, donde se han presentado otras técnicas culinarias de diversos países, generando en la población una tendencia o inclinación a consumir con mayor realce la gastronomía extranjera; planteando el objetivo de identificar los gustos y preferencias alimenticias de los habitantes y cómo influyen las culturas extranjeras en la gastronomía del Cantón. Se utilizó una metodología de tipo descriptivo, permitiendo identificar el objeto de estudio, brindando un enfoque cualitativo y cuantitativo en conjunto con los instrumentos de investigación utilizados (encuestas y entrevistas). Los resultados del estudio, dieron una nueva perspectiva, debido a que la ciudad se caracteriza por la amplia variedad de gastronomía a base de mariscos, se pudo establecer que los gustos son las carnes rojas 22% y mariscos 39,3%; además se identificando si su nutrición es adecuada, sin embargo, los resultados se obtuvo un alto consumo de comida rápida y el poco consumo de vegetales; en cuanto a la influencia de comida extranjera no tiene mayor relevancia dentro de los habitantes, ya que de la población prefieren mayoritariamente  la comida local  o típica; por último la materia prima representativa del cantón para la elaboración de la gastronomía local son los mariscos coincidiendo con los gustos mayoritarios de los pobladores.Palabras clave: Gustos, preferencias, gastronomía, nutrición, turismo.ABSTRACT In the present work of investigation, it was possible to determine the tastes and preferences of the citizens of Santa Rosa, pertaining to the province of El Oro, Ecuador, identifying the problematic one of this sector, where other culinary techniques of diverse countries have appeared, generating in the population a tendency or inclination to consume with greater enhancement the foreign gastronomy; raising the objective to identify the tastes and nutritional preferences of the inhabitants and how the foreign cultures influence in the gastronomy of the Canton. A descriptive methodology was used, allowing the identification of the object of study, providing a qualitative and quantitative approach together with the research instruments used (surveys and interviews). The results of the study, gave a new perspective, because the city is characterized by the wide variety of gastronomy based on seafood, it was possible to establish that the tastes are red meat 22% and seafood 39.3%, also identifying if their nutrition is adequate, however, the results were high consumption of fast food and low consumption of vegetables; As for the influence of foreign food, it has no major relevance within the inhabitants, since most of them prefer local or typical food; finally, the representative raw material of the canton for the elaboration of the local gastronomy is seafood, coinciding with the majority of the inhabitants' tastes.Keywords: Tastes, preferences, gastronomy, nutrition, tourism.
