dc.descriptionIn this article, we present the results of an ethnographic investigation focused on characterizing the value of the chaitún in the agri-marine food system of the Calbuco archipelago in southern Chile. Chaitún is a traditional preparation of the inhabitants of the southern Chilean coastline, particularly the inland sea of Reloncaví and Chiloé, based on the collection of benthic species located in the intertidal zone. The work of chaitún is primarily carried out by women who, within the framework of a collective organization and resorting to artisan production practices, have a typical product to trade in local and regional markets. Our analysis exposes and discusses the possibilities and limitations of chaitún as a typical food, reflecting on its perspectives of differential positioning.en-US
dc.descriptionEn este artículo presentamos los resultados de una investigación etnográfica centrada en caracterizar el lugar del chaitún en el sistema agromarino alimentario del archipiélago de Calbuco. El chaitún es una preparación tradicional de los habitantes del borde costero del sur de Chile, en particular del mar interior de Reloncaví y Chiloé, basado en la recolección de especies bentónicas situadas en el intermareal. Mayoritariamente es un trabajo realizado por mujeres, quienes, en el marco de una dinámica de organización colectiva y recurriendo a prácticas de elaboración artesanal, disponen de un producto típico para comerciar en los mercados locales y regionales. Nuestro análisis expone y discute los alcances y las limitaciones del chaitún en tanto alimento típico, reflexionando sobre sus perspectivas de posicionamiento diferencial.es-ES
