| dc.description | This article aims to contribute to the history of sugar in the Kingdom of Chile, specifically analyzing the medical importance it had for the nuns of Santiago during the colonial era, mainly for its renowned therapeutic properties. Through the crossing between unpublished conventual sources (account books, letters, and confessional writings) and other published sources of the time and considering the theoretical approaches of the cultural history of food, highly influenced by the anthropology of food; The medical use that these women gave to the processed sucrose is demonstrated. Likewise, this phenomenon is explained from an ancient Hispanic-Arab tradition, spread in Chile through cookbooks and medical treatises. The frequent elaboration of fruit sweets, together with the profuse intake of sweetened drinks, syrups, and sorbets bythese nuns; are some examples of it.Keywords: sugar, nuns, medicine, Chile. | en-US |
| dc.description | El presente artículo pretende contribuir a la historia del azúcar en el Reino de Chile, analizando específicamente la importancia médica que tuvo para las monjas de Santiago durante la época colonial, principalmente por sus renombradas propiedades terapéuticas. A través del cruce entre fuentes conventuales inéditas (libros de cuentas, epistolarios y escritos confesionales) y otras fuentes ya publicadas, y considerando los planteamientos teóricos de la historia cultural de la comida, muy influida por la antropología de la alimentación, se demuestra el uso médico que estas mujeres le otorgaban a la sacarosa procesada. Asimismo, se explica dicho fenómeno a partir de una antigua tradición hispano-árabe, difundida en Chile a través de recetarios de cocina y tratados médicos. La frecuente elaboración de dulces de frutas, junto a la profusa ingesta de bebidas, jarabes y sorbetes edulcorados por parte de estas religiosas son algunos ejemplos de ello.Palabras clave: azúcar, monjas, medicina, Chile. | es-ES |
