Comparision of two slaugthering procedures in rainbow trout (Oncorhynchus mykiss)

dc.descriptionEl método tradicional de sacrificio de trucha arcoiris (Onconrhynchus mykiss) mediante aturdimiento automático seguido de desangre por corte branquias fue comparado con un método alternativo por disminución rápida de la temperatura (-3.5°C) con inmersión en hielo líquido sin usar desangrado. Se midió el pH muscular como un indicador de estrés alcanzado durante las fases de confinamiento y de sacrificio, y se evaluó la capacidad de retención de sangre que tienen las vísceras y cabezas como fuentes potenciales para uso y resguardo de la bioseguridad debido a riesgos de dispersión de sangre al medio. Los pesos medios de las vísceras y cabezas por ejemplar con el método alternativo de sacrificio superaron en 24,4 g al método tradicional, lo que equivale a un 1,07% del peso medio del cuerpo de un ejemplar promedio. El método alternativo acumuló un 5,3% más de peso por ejemplar en las vísceras, y un 4,9% más de peso en las cabezas que el método tradicional. La retención estimada de sangre debido a las vísceras y cabezas con el método alternativo correspondió al 44,6% del total de sangre derramada por el método tradicional. Proyectando una producción de salmónidos (truchas y salmones) al año 2014 de 900.000 ton, la retención de sangre sería al menos de 9.630 ton. No se evidenciaron diferencias significativas en el pH muscular entre los dos métodos. El pH de los peces en el punto de confinamiento fue igual a 7,06 magnitud que disminuyó aproximadamente a pH = 6,5 en la fase de sacrificio independiente del método de sacrificio utilizado. El método alternativo no produce la muerte instantánea del pez, pero tiene mayor capacidad que el método tradicional de retener sangre en vísceras y cabezas para ser usada en aumentar la bioseguridad, y si se combina con métodos más eficientes para alcanzar una rápida inconsciencia, por ejemplo aturdimiento eléctrico, se tendría un método de sacrificio combinado útil para mejorar los actuales métodos. La propuesta de métodos más eficientes y efectivos de sacrificio de los peces es un tema abierto que requiere más investigación.es-ES
dc.descriptionThe traditional slaughter procedure of rainbow trout (Onconrhynchus mykiss) by automatic stunning followed by bleeding by cutting gills was compared with an alternative slaughter procedures which involves rapid decreasing temperature (-3.5°C) by immersion in flow-ice without gill bleeding. Muscle pH was measured as an indicator of stress achieved during confinement and sacrifice phases. The capacity of blood retention in the gut and head is proposed as potential sources to assess biosecurity. The average weight of gut and head per fish with the alternative method was 24.4 g higher than the traditional method, equivalent to 1.04% of the body weight of an average specimen. The alternative method accumulated 5.3% more weight in gut per fish than the traditional method and 4.9% more in the head weight than the traditional method. The amount of blood retained in the gut and head with the alternative method represented 44.6% of total shed by the traditional method. For a forecast of 900,000 ton of salmonids in 2014, the blood retained in gut and head was estimated in at least 9,630 ton. No significant differences in muscle pH between the two methods were observed. The pH of the fish in the confinement point was equal to 7.06 decreasing approximately to 6.5 in the sacrifice phase independent of the method employed. The alternative method does not produce instant death of the fish; however, it has more capacity than the traditional method to retained blood in gut and head to be used in increasing biosecurity and if combined with more efficient methods to achieve rapid unconsciousness, e.g. electrical stunning, we would have a combined sacrifice method useful to improve current methods. The proposal for more efficient and effective slaughter methods of fish is an open issue that requires further investigations.en-US
