This article reexamines the evolution of the concept of Localized Agri-Food System (LAFS), focusing on its relationship with consumption and the structure of the basket of place-qualified goods and services, in particular the growing importance given to tourism in the literature. The article presents new theoretical approaches that allow deepening the relationship between the rating of the basket and the rating of consumers through their practices of consumption. Furthermore, the article argues about the consequences on LAFSs dynamics and their contribution to sustainable development trajectories at the environmental and social level.Este artículo retoma la evolución del concepto de Sistema Agroalimentario Localizado, centrado sobre su relación con el consumo y la estructura de la canasta de bienes y servicios calificados por el origen, en particular el peso creciente de la referencia al turismo en la literatura. Presenta nuevos enfoques teóricos que permiten profundizar la relación entre la calificación de la canasta y la calificación de los consumidores a través de sus prácticas de consumo. De ahí establece consecuencias sobre la dinámica de los Siales y su contribución a trayectorias de desarrollo sustentable a nivel ambiental y social.
