Colonia Cheese: Tradition and Transformation. Biochemical, Historical, Heritage and Gastro-Tourism Intersections

dc.descriptionAnalizamos el queso colonia desde un enfoque transdisciplinario que describe las intersecciones bioquímicas, históricas, patrimoniales y gastroturísticas de este producto emblemático de la quesería uruguaya. Se considera que el queso es un producto alimentario que refleja la identidad de un territorio, sus características físicas y humanas, los valores patrimoniales asociados a los procesos de elaboración y comercialización, y a la tradición y transformación derivadas de la evolución tecnológica y de los procesos migratorios. Estos conceptos se ejemplifican a partir del estudio de caso del queso colonia artesanal. Para ello se hizo una revisión bibliográfica y se realizaron entrevistas en profundidad a actores clave del sector quesero. Se encontró que el queso colonia es un producto con gran potencial nutricional, patrimonial y gastroturístico que no es explotado en todas sus posibilidades. Para concluir se sugieren acciones a futuro para paliar esa situación: se apunta a la promoción de un trabajo colaborativo y cooperativo entre los diferentes actores involucrados, y a la creación de sinergias entre el sector y la academia, a fin de contribuir a la permanencia de los saberes históricos, a la visibilización del valor patrimonial del queso colonia y a su proyección turística.es-ES
dc.descriptionThis article analyzes Colonia cheese from a transdisciplinary approach that describes the biological, historical, heritage and gastro-tourism intersections of this emblematic product of Uruguayan cheese industry. Cheese is considered a food product that reflects the identity of a territory, its physical and human characteristics, the heritage values associated with the production and marketing processes, and the tradition and transformation derived from technological evolution and migratory processes. These concepts are exemplified from the case study of artisanal Colonia cheese. For this, a bibliographic review was carried out and in-depth interviews were performed with key players in the cheese sector. It was found that Colonia cheese is a product with great nutritional, heritage and gastro-tourism potential that is not fully exploited. To conclude, future actions are suggested to alleviate this situation: the aim is to promote collaborative and cooperative work between the different actors involved, and the creation of synergies between the industry and academia, in order to contribute to the protection of the historical knowledge, to the visibility of the heritage value of the Colonia cheese and its tourism promotion.en-US
